Description
Cooking simple whole grain brown rice is not hard, but there are some tricks to keeping it fluffy! My favorite way is in the rice cooker, because it's the most fluffy, but you can also cook it on the stove or bake it in the oven too. Try and see what you like best!

The stovetop cooking time depends on how low your burner will cook. My two electric stoves cook so low, that I have to cook it on 2 for at least two hours. But every stove is different. If your burner is really hot on low, or if you have a propane stove, consider using a diffuser.
Instructions
RINSE rice thoroughly in cold water
OPTIONAL STEP: TOAST over medium heat in dry skillet until it golden brown and sounds like popcorn, stirring constantly. (brings out the flavor and makes the rice fluffier)
RICE COOKER:
Follow your rice cooker directions for brown rice, putting rice, salt, and coconut milk in first and filling the rest with water. Cook on the brown rice setting.
STOVETOP:
Bring water, salt, coconut milk, and rice to a boil.
Turn down to low and simmer for 1-2 hours (DO NOT LIFT LID!)
Shut it off and let sit for 1 more hour before lifting lid.
OVEN:
Increase water to 2 1/2 cups water per 1 cup dry rice.
Place all ingredients into covered casserole dish.
Bake at 200F for 8 hours (overnight).
FLUFF with wooden spoon or a fork.
SERVE immediately or chill.
KEEPS one week in the refrigerator.
