Fruit Smoothie Ice Cream

We love ice cream! However, ice cream is very sweet and most of the time we don't have the patience to wait for it to freeze. So we make a fruit smoothie that's almost thick enough to be a soft serve ice cream!



1 1⁄2 c
soy milk or coconut milk (can use any kind of milk you like!)
2 c
frozen bananas (buy bananas on sale, then peel them and break them in chunks. Freeze them in a zip lock bag.)
1 1⁄2 c
frozen strawberries (can also use frozen mango slices or any other frozen fruit)
2 T
honey (can use dates, sorghum molasses, stevia, or fruit juice concentrate for sweetener)
2 t
vanilla flavor
1 pinch
salt (just a tiny pinch for flavor)


Serve in parfait glasses with layers of granola and some fresh or frozen fruit.


BLEND all ingredients with half the fruit until smooth. 

STOP occasionally to stir with a spatula or wooden spoon to help the frozen fruit to blend. 

ADD more fruit until a nice thick consistency.

POUR into bowls or glasses and serve with a spoon.
