Description

falafel sandwichFalafels are a unique patty made from chick peas (or garbanzos) that is native to the Middle East. They are traditionally fried or deep fried, and can be very spicy. This is a less-spicy-more-healthy version. And if you want to use no oil, you can bake them in the oven. I usually cook them on my electric griddle with a light coating of olive oil spray to keep them from sticking. They make amazing pita sandwiches, go great with salads if you're gluten free, and kids like to eat them plain with a dipping sauce! But please, if you're going through the work to make these, be sure to make the Cucumber Tahini Dressing! It just makes them shine! :) Happy cooking and enjoy!

Ingredients

2 c
onion (finely chopped with food processor)
6 clv
garlic (minced)
1 can
chickpeas, drained (or scant 2 cups cooked chickpeas)
1 c
fresh parsley leaves (lightly packed)
1 c
fresh cilantro leaves (lightly packed)
1 t
salt
1 t
paprika
2 t
cumin
1 c
sorghum flour (or 1/2 cup whole wheat flour)
2 t
baking powder (optional)

Notes

The instructions are if you have a food processor, but with a little work, you can make these without a food processor! Here's the hand mix directions:

HAND MIX directions:

CHOP onion, mince garlic, chop herbs and mash chickpeas.
MIX together.
ADD flour and baking powder (if using) and gently mix.
ADD a little more flour if mixture is really sticky.
REFRIGERATE at least one hour.

Instructions

PEEL onion and cut into four pieces.
MINCE garlic.
PULSE together in food processor until finely diced. Set aside.
POUR next six ingredients into food processor and lightly pulse until chunky.
ADD onion mixture, flour and baking powder (if using).
PULSE lightly until flour is incorporated.
REFRIGERATE at least one hour.

COOKING directions:

PREHEAT griddle.
ADD more flour if mixture is still watery or sticky.
SCOOP 2-3 Tablespoons of batter onto sprayed griddle (or cookie sheet if baking in oven).
COOK 3 minutes on each side.
COOL and serve!
LEFTOVERS freeze beautifully for a quick meal later!
