Gluten-Free Garlic RollsGluten-Free Dinner Rolls, homemade, whole grain, that actually taste good? I didn't think there was such a thing until about two weeks ago! I had just made an AMAZING batch of whole wheat garlic rolls for my dear husband, and the house smelled so good, I didn't think it was fair to watch him eat them all week and not get any, too! So I took the plunge and came up with my own recipe! And the best part was that I had the thrill of sitting at supper eating MY garlic rolls while he ate his, and nobody was left out! As usual for gluten free breads--they definitely taste the best warm. But they are YUMMY!

millet flour

tapioca flour
80 g
flax seed meal
30 g
chia seed meal

psyllium seed husks

Country Style Seasoning (optional. See recipe in Miscellaneous section.)

Notes

SO.... WHAT IF YOU ALREADY HAVE BREAD DOUGH MADE and you want to use it as dinner rolls, rather than making a full separate batch?

MINCE garlic and mix with olive oil and herbs and salt and let it sit while waiting for the dough to sit for 15 minutes. 

PREHEAT your cast-iron skillet during this time.

NOW take your dough, which is going to be your dinner rolls, and gently knead half of the garlic/herb mixture into the ball of dough. 

ADD a handful or two of flour, if needed, to make the dough the right consistency for dinner rolls.

OIL your cast-iron skillet and form dinner rolls into balls.

GENTLY brush remaining half of garlic/herb mixture over top of rolls before they raise.

PREHEAT oven to 425F while rolls are rising--the heat will speed up the process and then your oven will be hot when the bread is ready.

BAKE at 425F for 15 minutes, then turn down oven to 400F and bake for another 20 minutes or until toothpick comes out clean. Laugh as your whole family gathers in the kitchen to see what is happening, when the delicious smell permeates the entire house!

REMOVE from oven and cool on a rack. 

There :) Now you have both options! Hope that didn't confuse you too badly!

 

Instructions

MINCE garlic into tiny bowl.

ADD olive oil, rosemary, thyme, and pinch of salt.

STIR well and set aside for garlic to marinate for a few minutes.

MIX millet flour, tapioca, flax meal, chia meal, psyllium husks, sugar, Country Style Seasoning, and salt together in large bowl.

ADD oil, hot water, and half of garlic/herb mixture and stir quickly, but gently.

SET aside for 15 minutes to allow flour to absorb and for the dough to start rising.

PLACE cast iron skillet in cold oven and preheat for 10 minutes at 350F to help warm it up while waiting for dough.

OIL warm skillet and with floured hands, pull off balls of dough and place on skillet.

PLACE them slightly tight together, so they raise up and now out.

GENTLY brush remaining half of garlic/herb mixture over top of rolls before they raise.

PREHEAT oven to 425F while rolls are rising--the heat will speed up the process and then your oven will be hot when the bread is ready.

SERVE warm. They taste amazing by themselves, but the garlic flavor also goes really nicely with hummus or babaghanoush. Enjoy!
