Description

Whenever I think about holiday dinners--such as Thanksgiving dinner and Christmas dinner, the first thing that comes to mind is Sweet Potato Balls! Sometimes I'll just skip everything else on the table and just eat the salad, sweet potato balls, and dessert. Who needs more than that, anyway? Amazing deliciousness of mashed sweet potatoes, combined with the juiciness of pineapple and the crunch of pecans! And it's a feast for the eyes, too--beautiful balls sitting atop yellow pineapple rings, and sprinkled with chopped nuts! Ok, now that I have your mouth watering... here's the recipe! 

Ingredients

4 c
mashed sweet potatoes
20 oz
crushed pineapple (drained--don't use all of it if your sweet potatoes are really juicy already.)
1 c
chopped pecans (or walnuts)
1 t
maple flavor (optional)
1⁄2 t
salt
1⁄4 c
sweetener (my favorites are maple syrup or sorghum molasses, but anything works)
12  
pineapple rings
1⁄2 c
chopped pecans (or walnuts -- save for sprinkling on top)

Notes

The fun thing about this recipe, is that if you have extra batter after you've made your 12 balls, it freezes beautifully! You can use it to make future balls or just warm it like a casserole and lay pineaple rings on top before baking! I always make extra just so I can stick some in the freezer for a quick meal later!

Instructions

ARRANGE pineapple rings across the bottom of a 3 quart casserole dish. (I usually do 3 accross, 4 rows down.)

FORM sweet potato micture into balls.

PLACE each ball on a pineapple ring.

SPRINKLE top with extra chopped nuts.

CHILL until just before serving.

BAKE at 350F for 20 minutes, or until golden. 

SERVE immediately.
