Strawberry Chia Pudding

Light and refreshing--it's amazing by itself or served over a bowl of fresh fruit!

Ingredients

BLEND until smooth

  • 4 cups strawberries fresh or frozen
  • 14 oz full fat coconut milk Thai Kitchen
  • 2 tsp vanilla
  • 1 Tbsp lemon juice fresh
  • 1/4 tsp salt
  • 1/4 cup sorghum molasses OR other sweeteners, adjust to taste.

ADD after blending

  • 2/3 cup white chia seeds ~black chia seeds work, also.

Instructions

  1. BLEND all ingredients (except the chia seeds) until very smooth.

  2. POUR into a bowl.

  3. ADD and WHISK in chia seeds.

  4. OPTIONAL: Add your favorite dried fruit or cooked/canned fruit. (Dried cherries, dried apples, dried cranberries, dried pineapple, cooked rhubarb, etc.)

  5. POUR into jars OR glass bowl, if serving the whole recipe.

  6. REFRIGERATE 6 hours or overnight.

  7. SERVE with fresh sliced strawberries OR mango, blueberries, granola, etc.
