This incredible savory breakfast dish is a perfect way to start your day! Lots of flavor, protein, and fiber--it's great paired with whole grain toast and fresh salsa!
Break tofu into small chunks, mix with turmeric and set aside.
Slice onions and peppers. Saute in small amount of water or oil until tender (about 3-5 minutes).
Add minced garlic and seasonings. Stir well.
Add tofu mixture and simmer for 3-5 minutes until water has evaporated and tofu is soft.
Serve with a little vegan cheese and fresh salsa!
