Gluten-Free Garlic Dinner Rolls

Ingredients

GARLIC Mixture

  • 12 cloves garlic minced
  • 3 Tbsp olive oil
  • 1 tsp rosemary adjust as desired
  • 1 pinch salt

DRY Ingredients

  • 300 grams millet flour
  • 120 grams tapioca flour
  • 80 grams flax seed meal
  • 30 grams chia seed meal
  • 22 grams whole psyllium seed husks
  • 47 grams organic sugar
  • 7 grams salt
  • 11 grams yeast

WET Ingredients

  • 57 ml light olive oil (57 grams weight on a scale)
  • 503 ml cool water 68F

Instructions

  1. MINCE garlic into a tiny bowl.

  2. ADD olive oil, rosemary, thyme, and pinch of salt.
  3. STIR well and set aside for garlic to marinate for a few minutes.
  4. MIX dry ingredients together in large bowl.

  5. ADD wet ingredients, and half of garlic/herb mixture and stir quickly, but gently.

  6. SET aside for 20 minutes to allow flour to absorb and for the dough to start rising.

  7. OIL cast iron skillet and with floured hands, shape balls of dough and place on skillet.

  8. PLACE them slightly tight together, so they raise up and not out.

  9. GENTLY brush remaining half of garlic/herb mixture over top of rolls before they raise.
  10. PREHEAT oven to 400F while rolls are rising--the heat will speed up the process and then your oven will be hot when the bread is ready.

  11. BAKE at 375F for 40 minutes OR until toothpick comes out clean. Laugh as your whole family gathers in the kitchen to see what is happening, when the delicious smell permeates the entire house!

  12. REMOVE from oven and cool on a rack.
  13. SERVE warm. They taste amazing by themselves, but the garlic flavor goes really nicely with hummus or babaghanoush. Enjoy!

Recipe Notes

SO.... WHAT IF YOU ALREADY HAVE BREAD DOUGH MADE and you want to use it as dinner rolls, rather than making a full separate batch? MINCE garlic and mix with olive oil and herbs and salt and let it sit while waiting for the dough to sit for 15 minutes. NOW take your dough, which is going to be your dinner rolls, and gently knead half of the garlic/herb mixture into the ball of dough. ADD a handful or two of flour, if needed, to make the dough the right consistency for dinner rolls. Have fun!
