MIX yeast, sweetener, salt, and water together in large bowl.
ADD one cup of flour OR as needed to make a sticky dough consistency.
SET aside for 20 minutes to allow flour to absorb and for the dough to start rising.
OIL cast iron skillet and with floured hands, form balls of dough and place in skillet.
PLACE them slightly tight together, so they raise up and not out.
PREHEAT oven to 400F while rolls are rising--the heat will speed up the process and then your oven will be hot when the bread is ready.
BAKE at 400F for 30 minutes, until rolls are golden. Laugh as your whole family gathers in the kitchen to see what is happening, when the delicious smell permeates the entire house!
REMOVE from oven and cool on a rack.
SO.... WHAT IF YOU ALREADY HAVE BREAD DOUGH MADE and you want to use it as dinner rolls, rather than making a full separate batch?
MINCE garlic and mix with olive oil and herbs and salt.
KNEAD it gently into one loaf worth of dough on a floured counter, adding a bit more flour as needed to keep it from being too sticky.
Follow remaining directions for the rolls. Have fun!
