Sesame Candy (No Honey)

Ingredients

  • 1/3 cup crunchy peanut butter
  • 1/2 cup sorghum molasses
  • 1/4 tsp salt ~more if using unsalted peanut butter
  • 1/2 tsp vanilla extract
  • 1/2 cup organic sugar
  • 2 cups sesame seeds hulled
  • 3/4 cup shredded coconut ~unsweetened

Instructions

  1. PREHEAT oven to 350F.

  2. MIX peanut butter, sorghum molasses, salt and vanilla.

  3. ADD sugar and gently mix. (Don't mix too long, or it will turn hard.)

  4. COVER 9x13 glass baking dish with parchment paper and lightly spray with oil.

  5. PRESS firmly into pan with rubber spatula.

  6. SLICE into squares with oiled sharp knife.

  7. BAKE at 300F for 10 minutes.

  8. ROTATE pan and BAKE at 300F for another 10-15 minutes or until golden.

  9. COOL 30 minutes, before carefully removing squares from pan. They will still be a bit soft. They harden as they cool.

  10. COOL thoroughly on rack.

  11. Refrigerate OR freeze.

  12. Yield: 30 medium-sized squares
