Oat-Free “Granola” Bars
Yield: 16 bars
- 5 cups whole grain puffed rice OR other puffed grain
- 2 cups whole grain puffed quinoa OR other puffed grain–millet, etc.
- 3/4 cup peanuts OR your favorite nuts or seeds, optional
- 1/2 cup dried cranberries
- 1 cup raisins
- 1 tsp coriander
- 3/4 cup honey
- 3/4 cup peanut butter OR almond butter, etc.
- 2 Tbsp coconut oil
STIR cereal, nuts, fruit, and coriander in a large mixing bowl.
POUR honey, nut butter, coconut oil, and salt into a small kettle.
WARM on medium heat until mixture turns runny, stirring constantly.
POUR over cereal mixture.
STIR well to coat evenly.
PRESS firmly onto sided cookie sheet. (Tip: wet your hands with cold water to prevent cereal from sticking.)
FREEZE for at least one hour before cutting into bars.
STORE in freezer or refrigerator. They hold together best if stored in the freezer and eaten directly from freezer.
ENJOY! Makes a great to-go breakfast with some fresh fruit, or even a fast and easy dessert!
You are not limited to this recipe! As long as you have a total of 7c. puffed cereal of choice, 3/4 cup of some kind of nut or seed, and 1 1/2 c. of your favorited bits of dried fruit, you have the same ingredients. For nut butter you can use almond butter, cashew butter, or even sunflower seed butter or sesame tahini! If you don’t have coconut oil, you can substitute with earth balance or some kind of margerine. The sky is the limit! Here are a few ideas:
Hawaiian bars: dried pineapple & dried papaya for the fruit, and macadamia nuts and coconut for the nuts.
Cranberry Nut bars: use just dried cranberries, walnuts, and almonds Energy Nut bars: use 2 c. nuts and omit all dried fruit.
Seed bars: use sunflower seeds and pumpkin seeds instead of the nuts, and seed butter instead of nut butter.
Apple raisin bars: use 1 c. chopped dried apples and 1/2 c. raisins, and use 2 t. coriander What is your favorite flavor? You can even add a drop or two of flavorings/flavor oils. Use your imagination!!
