Okra is one of those controversial vegetables. Most people think slime or fried. But those who think slime are usually remembering boiled okra. Have you ever tried steamed okra? It's one of our favorites and is truly fast food! Main thing to remember--DO NOT overcook!
BRING 1/2 inch of water to a boil in a kettle.
PLACE okra in a steamer basket.
ADD steamer basket to kettle with boiling water and cover.
STEAM for three minutes (if small) or 4-5 minutes (if larger).
REMOVE from heat and serve immediately.
SERVE plain, sprinkle with onion salt, or dip in your favorite hummus or salad dressing.
