Description

In the summer time, tomatoes are available around here in abundance. Farmers sell boxes of seconds (canners) for $6-$8 per 1/2 bushel box. I buy a box and put them in the refrigerator, and we eat tomato salads all summer long. Sometimes we just slice tomatoes on a plate, but if we want a nice salad, this is our favorite recipe. Mmmmm!

Ingredients

tomatoes
1⁄2  
cucumber
1 T
lemon juice
1 t
sweetener (honey, sugar, sorghum, OR a pinch of stevia)
1⁄8 t
salt
1⁄2 t
onion powder (OR chopped fresh onion)
2 t
dried sweet basil (OR 1/4 c. fresh basil leaves, chopped or torn into pieces)

Instructions

CHOP vegetables into a mixing bowl.

SPRINKLE lemon juice, sweetener, and seasonings on top.

MIX together well.

SERVE immediately or chill.

SERVE as is or with a spoonful of sour cream on top.
