Tomato Salad

In the summer time, tomatoes are available around here in abundance. Farmers sell boxes of seconds (canners) for $10 per 1/2 bushel box. I buy a box and put them in the refrigerator, and we eat tomato salads all summer long. Sometimes we just slice tomatoes on a plate, but if we want a nice salad, this is our favorite recipe. Mmmmm!

Ingredients

  • 3 cups tomatoes chopped
  • 1 cup cucumber chopped
  • 1 Tbsp olive oil
  • 1 ½ Tbsp sorghum molasses OR favorite sweetener
  • 1 ½ Tbsp lemon juice
  • 1/4 tsp salt
  • 1 tsp onion powder OR chopped fresh onion
  • 1/4 cup fresh basil leaves, chopped OR 1 Tbsp dried basil

Instructions

  1. CHOP vegetables into a mixing bowl.
  2. SPRINKLE lemon juice, sweetener, and seasonings on top.
  3. MIX together well. Season to taste.

  4. LET SIT for 5 minutes to marinate.

  5. SERVE as is OR with a spoonful of sour cream on top.
