Cabbage over Rice
This is a fun and easy way to serve cabbage! The vegetables can be substituted for any vegetables you have on hand. I had to make a dish for a fellowship meal this past weekend and didn't want to make soup. I steamed the vegetables in the kettle and put it over a casserole dish of rice. There wasn't much leftovers and it was really tasty! If you don't have fresh tomatoes, you can use canned whole tomatoes instead. Enjoy your vegetables!
SLICE the onion, mince the garlic, chop the tomatoes in large chunks, and cut green beans into bite-sized pieces.
ADD water and bring to a boil.
SIMMER about 20 minutes until vegetables are tender, stirring every few minutes.
SERVE warm over rice.
