Fruit Smoothie Ice Cream

We love ice cream! However, ice cream is very sweet and most of the time we don’t have the patience to wait for it to freeze. So we make a fruit smoothie that’s almost thick enough to be a soft serve ice cream!

Ingredients

  • 1 cup soy milk (You can use any kind of milk you like!)
  • 3 Tbsp apple juice concentrate OR dates, sorghum molasses, stevia, honey, organic sugar, etc.
  • 2 bananas frozen; buy bananas on sale, then peel them and break them in chunks. Freeze them in a zip lock bag.
  • 1 cup strawberries frozen; (Can also use frozen mango slices OR any other frozen fruit.)
  • 1/2 tsp vanilla flavor

Instructions

  1. BLEND all ingredients with half the fruit until smooth.
  2. STOP occasionally to stir with a spatula or wooden spoon to help the frozen fruit to blend.
  3. ADD more fruit until a nice thick consistency.
  4. POUR into bowls or glasses and serve with a spoon.

Recipe Notes

Serve in parfait glasses with layers of granola and some fresh or frozen fruit.
