Soy Sour Cream
Yield: 1 quart
- 1 ¼ cup soy milk powder
- 2 cups water
- 1/4 tsp salt
- 1 Tbsp onion powder
- 1/2 cup olive oil
- 1/3 cup lemon juice
BLEND soy milk powder, water, salt, and onion powder until very smooth.
ADD more water if needed to blend (1 Tbsp at a time).
SLOWLY add olive oil while blending (may need to help stir with spatula).
SHUT off blender.
ADD lemon juice (use more if you like it more sour) and stir with spatula.
POUR into container. Should be relatively thick.
SERVE immediately or refrigerate.
KEEPS one week.
Soy milk powder is processed soybeans.
Use as a mayonnaise, pasta salad dressing, potato salad dressing, OR add herbs and more water to make a ranch dressing.
