Tofu Scramble Deluxe
This incredible savory breakfast dish is a perfect way to start your day! Lots of flavor, protein, and fiber–it's great paired with whole grain toast and fresh salsa!
- 14 oz Tofu (Firm or Extra firm, water pack is best)
- 1/8 tsp turmeric
- 1 small onion sliced thin
- 1/2 medium red bell pepper sliced thin
- 1 Tbsp olive oil or water
- 2 cloves garlic minced
- 1 tsp salt
- 2 tsp onion powder
- 1/2 tsp garlic powder
Break tofu into small chunks, mix with turmeric and set aside.
Slice onions and peppers. Saute in small amount of water or oil until tender (about 3-5 minutes).
Add minced garlic and seasonings. Stir well.
Add tofu mixture and simmer for 3-5 minutes until water has evaporated and tofu is soft.
Serve with a little vegan cheese and fresh salsa!
