Barbecued Jackfruit

Ingredients
SAUTE' until tender
- 1 small onion finely chopped
- 1 clove garlic minced
ADD
- 14 oz canned green jackfruit drained and cut
- 1/4 tsp smoked paprika
- 1 tsp paprika
- 1/4 cup water additional
ADD sauce as needed
- 1/2 cup Kristina's Barbecue Sauce ~see recipe
Instructions

DRAIN and rinse jackfruit, using a colander.

CUT jackfruit into small pieces and gently pull apart. Discard anything that is tough and the really large seeds.

SAUTE onion, and garlic for about 5 minutes.

ADD jackfruit, paprika, smoked paprika, and salt.

ADD Barbecue Sauce until desired consistency and mix.

SIMMER for a few minutes, stirring frequently.

POUR into an oiled-coated casserole dish.

BAKE at 300F for 30 minutes.

SERVE as a Sloppy Joe sandwich filling and eat with Kristina's Coleslaw.
Recipe Notes
For this recipe you need green jackfruit–not ripe! Sometimes the can will say “young” or “unripe”. My favorite canned jackfruit is the Native Forest organic jackfruit, because it uses lime juice, instead of preservatives.
