Description

Quinoa is actually a seed, not a grain--like millet is! It is extremely nutritious and yummy, too! The most amazing thing about quinoa is that it is a complete protein! Once cooked, it can be used instead of rice in any recipe, and tastes good as a hot cereal, too! I've been cooking it in a kettle on the stovetop for years, but just recently, my mother-in-law bought me a rice cooker. I've discovered the thrill of cooking quinoa in a rice cooker and absolutely LOVE it! So I'm going to give you the directions for both stovetop and rice cooker. :)

Ingredients

2 c
quinoa
4 c
Water
1 t
salt (opt.)

Notes

If you are not going to eat it right away, remove it from heat as soon as it's done cooking and transfer it to a glass dish. Fluff it up nicely and then let it chill. This will help keep it from clumping together into a sticky block and make it easier for using or serving later. 

Instructions

STOVETOP INSTRUCTIONS:

RINSE quinoa thoroughly and drain with strainer.

BRING water, salt, and quinoa to a boil.

COVER and turn down to medium-low (or low, depending on how low your stove cooks).

COOK for 1 hour.

DO NOT LIFT UP THE LID!

SHUT off burner and let sit for another 30 minutes to keep it from sticking to the bottom of the pot.

DO NOT LIFT THE LID until the time is finished!

SERVE immediately or chill.

 

RICE COOKER INSTRUCTIONS:

RINSE quinoa thoroughly and drain with a strainer.

PLACE quinoa, salt, and water in rice cooker and stir salt in.

CLOSE and turn on white rice setting.

WHEN finished, remove from rice cooker and transfer to serving dish or storing dish.

SERVE immediately or chill.
